During the #weekend, I love to prepare a homemade cake for breakfast: both my partner and I love simple and genuine flavours, so I know that with my yoghurt cake I am always on the safe side. It is impossible to be satisfied with just one slice 😉
Ingredients
- 250 gr flour 00
- 3 eggs
- 180 gr butter
- 230 g caster sugar
- Half a sachet of yeast
- 250 g white yoghurt
- 50 g potato starch
- Half a glass of milk
- Granulated sugar
- Icing sugar for garnish
Preparation
Whip the eggs with the sugar until frothy and fluffy. Gradually add the yoghurt and the previously melted (and cooled) butter, continuing to whisk. Add the sifted flour, starch and baking powder (this makes it easier to combine them with the dough). If the dough is too difficult to work with, you can add half a glass of milk. When the mixture is smooth and free of lumps, pour it into a greased and floured 24 cm cake tin. At this point, you can sprinkle the surface with plenty of granulated sugar if you wish. Bake in a preheated, static oven at 180 degrees for about 40 minutes.
Note
Check that the cake is cooked evenly by testing it with a toothpick. Let cool and sprinkle with icing sugar.
