Composition
Blend of strong grains (e.g. Bologna, Giorgione) and breadmaking grains (e.g. Altezza, Caronte) cultivated on land no more than 70km from Vicchio. 100% Tuscan flour.
Features
Thanks to stone milling and millstones further apart, this flour preserves all the nutrients of the whole grain, including the wheat germ: fibre, protein, vitamins. And lots and lots of flavour. When wheat is good, you don’t throw anything away!
It gives its best in slow-rising bread. Many use it together with other flours to increase the consistency and flavor of breadcrumbs and doughs.
Preservation methods
IThe product should be stored at room temperature, away from heat sources and direct sunlight.
