Poured jam cake is a truly delicious dessert: it is the classic ‘cupboard cake’ that smells of home, perfect for breakfast but also for a tasty snack with friends. This is a fluffy cake with a filling that, although made while baking, remains perfectly in the middle of the cake without falling to the bottom. Ready to prepare it with me?
Ingredients
- 250 gr flour 00
- 4 eggs
- 170 gr butter
- 230 g caster sugar
- Half a sachet of yeast
- Half a glass of milk
- Jam as desired
- A pinch of salt
- Icing sugar for garnish
Preparation
To make the jam poured cake, start by whipping the eggs with the sugar until the mixture is thick and fluffy. To make the jam poured cake, start by whipping the eggs with the sugar until the mixture is thick and fluffy. Add flour, baking powder and starch WELL SET, alternating them with the milk. This will make it easier to obtain a very smooth and homogeneous dough. Transfer half of the mixture into a well buttered and floured 24 cm diameter mould. Level it out well and bake in a preheated, static oven at 180° for 20 minutes. Remove from the oven, spread the jam over the entire surface and cover with the remaining mixture, gently levelling off. Continue cooking, at the same temperature, for another 30-35 minutes, testing at the end with a toothpick. Take the cake out of the oven and let it cool completely before sprinkling it with icing sugar.
