… Oh no, don’t tell me that you are too lazy to cook or that ‘you are not capable’. What I am proposing today is a very easy process, without any degree of difficulty, my word. The #coconutbiscuits can be prepared in just a few minutes. You will be amazed by the result and as soon as you have finished enjoying them, you will already want to bake more. Are you ready?! Ingredients
- 150 g flour 00
- 150 g raped coconut
- 150 g butter
- 1 egg
- 180 g caster sugar
- A level teaspoon of yeast
- Coconut rapè q.b. for covering
Procedure
Whisk together the softened butter and sugar until soft and smooth. Add the sieved flour, stir gently with a spatula and then add the grated coconut and baking powder. Add the egg and continue mixing all the ingredients together to form a compact, moist dough. Wrap the dough in cling film and leave it to rest in the fridge for an hour. After an hour in the fridge, use a spoon to scoop out small quantities of the dough, form small balls, dip them in more coconut rapè, press them lightly and place them on a baking tray lined with baking paper. Bake for 12 – 14 minutes at 160° in a preheated, static oven.
